Ingredients
6 higher welfare pork sausages or vegetarian sausages
glug of olive oil
1 courgette
1 carrot
2 cloves garlic
1 x (690g) jar of passata
1 tsp dried oregano
1 tsp dried rosemary or 2 sprigs of fresh rosemary
1 tbsp balsamic or red wine vinegar
pepper
280g dried spaghetti
Method
Kids: Chop each sausage into 4 balls, it doesn't matter if the skin comes off or stays on. Leave the sausages to one side. Now wash your hands!
Using a cheese grater, grate the courgette and carrot. (Little kids need help with carrots and make sure they keep fingers well away from the grater.) Using the smallest setting on a grater, finely grate the garlic.
Grownups: In a sauce pan heat a glug of olive oil and fry the sausage balls, stirring until they are browned.
Kids: Add the grated courgette, carrot and garlic and stir for 1 minute.
Pour over the passata, add the oregano, rosemary, vinegar and a pinch of pepper and stir well.
Grownups: Bring the sauce to the boil and then put a lid on the saucepan. Turn the heat to low and simmer gently for at least an hour. Stir it occasionally to stop the sausages from sticking.
10 minutes before serving. Bring a pan of boiling water to the boil and cook the spaghetti as per the instructions on the packet. When cooked, drain the pasta and remove the sauce from the heat. Add the pasta to the meatballs and sauce, mix gently and serve.
Warning! Children should be supervised in the kitchen at all times. Use child safe knives and children should be supervised when using ovens and hobs.
