This recipe uses up leftover porridge into a tasty cookie recipe. The cookie comes out somewhere between a cookie and a flapjack. Making these is a good opportunity to chat about food waste; in a nutshell it’s not good for the world, so let’s find interesting ways to use up our leftovers.
Ingredients
150g leftover porridge
150g oats
150g self raising flour
Xx oil
1 egg
2 little handfuls of raisins
1 tsp vanilla essence
½ tsp cinnamon
Method
Preheat the oven to 200°/ 180°C fan/ gas 6.
Kids: Tip your leftover porridge into a mixing bowl and add the oats and self-raising flour.
Add the cinnamon and mix lightly.
In a separate bowl whisk together the egg, oil and vanilla essence and pour into the oat mixture.
Stir with a spoon until it is well combined. Then use your hands to bring into a dough. Use a tablespoon to spoon small blobs onto a baking tray and squash down gently with your hands.
Grownups: Bake in the oven for 12-15 min.
Remove from the oven and leave to cool on a wire rack.
Warning! Children should be supervised when cooking at all times. Children should use child safe knives and never use the oven or hob unsupervised.
